I am always looking for new mac and cheese recipes. Who knew there were so many ways to fix this comforting dish? This Lumberjack Mac n Cheese recipe was popular in the 50’s and 60’s because it was fairly inexpensive to make and could feed a crowd.

The 1950’s housewife knew her way around a box of pasta. After all, pasta is inexpensive and a little goes a long way. When it comes to a pantry staple, pasta in all of its shapes and forms is always a good idea.

This Lumberjack macaroni and cheese recipe has quite a few perks to it, but there is clearly a best part worth mentioning. IT HAS BACON! Oh wait, that’s not it. The best part is YOU CAN MAKE IT IN UNDER 30 MINUTES! Oh, and you don’t need to find a lumberjack to serve it to. Kids, friends, and spouses will do just fine!

What kind of cheese should you use in homemade macaroni and cheese?

Now there is some debate about what kind of cheese you should use in homemade macaroni and cheese. I think medium or sharp cheddar works best. But here is the thing, I think a cheese product like Veleveeta is also key.

Velveeta melts so well and keeps mac n cheese recipes creamy. Even the highest quality shredded cheese tends to melt sticky and rubbery. Because of this, I use Velveeta in addition to shredded cheddar.

How do you make macaroni and cheese creamy?

A big complaint I often hear from people who make homemade macaroni and cheese recipes is that the finished product comes out sticky and rubbery. There are a few ways to make macaron and cheese creamy.

First, you can always add a splash of whole milk or even use a product like Milnot to help keep the cheese creamy. The amount you add will depend on how much you are making, but adding a 1/4 of a cup at a time until you get the desired consistency is a great idea.

Also, use quality cheese and DON’T overcook. This tends to ruin the cheese fast if it is overcooked.

There has been much debate on which type of noodle is best for macaroni and cheese. For homemade mac n cheese I think the traditional macaroni noodle is great!

Some folks like to use spiral noodles, as they soak up the cheese well. You could even use penne if you wanted to. Medium noodle varieties seem to do best.

Lumberjack Macaroni and Cheese Recipe

Ingredients:

– 1 box of uncooked macaroni noodles (8 ounces)
– 1 cup of sharp cheddar cheese, shredded
– 1 cup of Velveeta cheese, grated or cubed
– 2 tablespoons of Worcestershire sauce
– 1/2 cup of canned chili or chili sauce
– 3/4 cup of melted butter
– 5-6 strips of bacon, cooked crispy

Directions:

1. Cook the macaroni noodles until al dente. Drain water. DO NOT RINSE. Return macaroni noodles to the pot and place on lowest heat setting.

2. Add the shredded cheddar cheese, Velveeta cheese cubes, Worcestershire and canned chili. Mix well. Do not let the mixture sit. Keep stirring to help the cheese melt.

3. Add the melted butter and continue to stir until the ingredients are mixed well and melted together nicely.

4. If your mixture is still sticky, you can add a splash of milk and raise the heat. Continue to stir well until the creamy consistency is achieved.

5. Top the macaroni with crispy, crumbled bacon.
