  • Cook potatoes (600g nicola potatoes, unpeeled) in a large saucepan of boiling, salted water for 15 minutes or until tender. Drain. Cool. Peel and chop.

  • Meanwhile, heat a large nonstick frying pan over high heat. Add bacon (2 middle bacon rashers, rind removed, chopped) and brown onion (1 medium brown onion, finely chopped). Cook for 2 to 3 minutes or until onion (3 green onions, thinly sliced) has softened. Transfer to a large bowl. Add potato and egg (2 hard-boiled eggs, chopped (see note)). Combine mayonnaise (1/2 cup whole-egg mayonnaise) and vinegar (1 tbsp Coles organic apple cider vinegar) in a bowl. Add to potato mixture. Season with salt and pepper. Toss to combine.

  • Serve topped with gherkins (2 gherkins, finely chopped) and green onion. Serve.

How to hard-boil eggs for potato salad

If you're going to make potato salad, you're going to need to hard-boil eggs. It's a classic ingredient, after all, especially in our best potato salad. Place in a saucepan or large pot. Cover potatoes with cold water. Cover pan. Bring to the boil over high heat. Reduce heat to medium. Simmer for 7 minutes. Place under cold water for 1 minute. Set aside to cool before peeling.
